Happy first Monday in February! I don’t know about all of you, but I am moving pretty slow this morning after a late night watching the Super Bowl. We went to my parents’ house around 5:00 pm yesterday and finally left around 11:00 pm, which for those of you who know me are well aware this is way past my typical bedtime! We thought we were going to be home at a more reasonable time, but thanks to the power outage in the third quarter, our plans quickly changed. However, I wouldn’t change a thing because it just gave me extra time to spend with my parents and brother. I may be wishing I was back in my bed right now, but getting to spend such a great evening with my family truly makes the dark circles under my eyes this morning worth it.
I was hoping to have more time to write today’s blog post, but by the time I got home I was exhausted and needed to finish cleaning a few dishes I had taken over to the party, and then transferred some wash to the dryer. After this, I headed straight upstairs to go to sleep. I am already realizing this morning that caffeine is going to be my best friend throughout the day, and I figure what better way to start than with a little cocoa coffee. I mixed two tablespoons of my homemade Sugar-Free Hot Cocoa Mix with about a cup of strong black coffee and a splash of milk. I may be feeling tired this morning, but there is nothing like starting off a new work week with just a little chocolate to put some extra pep in my Monday morning step.
Sugar-Free Hot Cocoa Mix
Ingredients
1/3 cup Stevia
1/3 cup cocoa powder
1/3 cup nonfat dry milk
2 tablespoons corn starch
1/4 teaspoon cinnamon
Directions
Mix together all ingredients. Store in an airtight container at room temperature. I like to keep the mixture in a mason jar in my cupboard, right next to my coffee beans!

Yum! Last night, I put the baby to bed and baked cookies for our small group tomorrow. However, I saw on Twitter that it was halftime so I did catch Beyonce doing her thing!

I watched the first half of the Superbowl and then decided to come home a little early (we were at our church’s youth group party) to relax a bit.
I add some cocoa, stevia, and milk to my coffee every once in awhile when I’m wanting a “mocha” kind of mug of coffee. It’s yummy! Normally I just add a dash of heavy whipping cream to my coffee, give it a stir, and I’m good to go.
I love heavy whipping cream in my coffee too! I was all about it over the holidays, but sadly I don’t have whipping cream in my fridge on a regular basis much anymore., lol! This may need to change though!
