Today may only be the middle of the work week, but it is actually my Thursday since I am off Friday this week. I have been counting down the minutes until my mom and I get to spend a girls day together, and boy oh boy am I ready for a little sweet relaxation! Today though, I am sharing a WIAW post filled with my eats from over the weekend, Sunday to be exact. Thank you Jenn for hosting!
Sunday was one of the most absolute beautiful days I have seen since last fall. The sun was shining, the air was warm, and nothing, not even losing an hour to Daylight Savings time could have taken away the extra pep in my step I had that morning. In honor of one of the first true spring days of the year, I decided to make a batch of homemade waffles that weren’t only delicious, but were also simple to make, required just a handful of ingredients, and were filled with healthy ingredients like banana, pecans, and oat and whole wheat flours. I affectionately named them Whole Wheat Banana Pecan Waffles, and I will be sharing the recipe sometime this week so be on the look out, it’s a good one!
I topped my waffles with a little syrup and extra pecans, and had sliced strawberries on the side along with a cup of coffee and a splash of cream. It was a perfect weekend morning brunch. Waffles are always a favorite in our house!
After breakfast, I cleaned up the kitchen, ran a couple loads of laundry, and continued with organizing my bedroom closet, a project that seems to be taking longer than I ever imagined. Who knew I had that many clothes? I am going to work really hard at not saying I have nothing to wear, because it simply is not true! In the mean time, Tim kept working on the half-bath remodel. We are getting close to finishing, only a small paint touch-up and the finishing pieces and it should be good-to-go!
Once my breakfast had finally digested, I was ready to get outside. I was so excited to take Tebow out into the warm sun I could hardly stand it, so around noon I leashed him up and we headed out for a nice long run/walk for an hour. Just soaking in a little sunshine and breathing in fresh air can make a world of difference to your mood, and to your soul. By the time we got back, I was ready for a little nourishment so I made a green smoothie that went perfect with the warm weather day.
Into the smoothie went:
- 1 Extra Ripe Banana
- Peanut Butter
- Almond Milk
- Ground Flax
- Spinach
- Ice
- A Pinch of Xantham Gum to Thicken!
It hit the spot, plus I got my nutrients and veggies in. It was a win-win!
The rest of the day we worked on cleaning up the house so we could start the week out on a fresh note. It may sound silly, but to me, nothing is as nice as ending the weekend with a house that is spic-and-span, vacuumed, filled with empty laundry baskets, full closets, and all the little things put into place. Starting the work week organized at home helps to keep me sane in the office!
Since we had been working hard all day, we decided to treat ourselves and go out to dinner for a date night. We are watching the amount we spend dining out right now to try and stick to our budget, so we headed out for Mexican since we had a coupon to use. I am a sucker for taco salads at Mexican restaurants, so that is exactly what I ordered, but this time I got chicken instead of my usual beef choice. I added a little cheese that I had asked for on the side, along with the sour cream already added in a dollop on top. I can do without cheese on my Mexican, but not sour cream! I also added some of the house salsa on top as a sort of dressing for the salad. So so good!
By the time we got home, I was pretty exhausted and ready for bed so I headed upstairs to read another couple chapters of The Hunger Games before I hit the hay and said goodbye to another incredible weekend.

I only use a tiny 1/4 teaspoon, but I do love the stuff. It definitely thickens my shakes right up!
I love Mexican food! I don’t get the same thing every time I go, but I usually rotate between a quesadilla, bean burrito, taco salad, and fajitas. I like all of it

Those are all my favorites too! I could seriously eat Mexican for just about every meal-so so good!
I’m a sucker for deals anywhere! I usually won’t buy something unless I have a coupon! I had a blast this weekend outside! I love anything at a Mexican restaurant but really like chips and salsa!
I am an oddball when it comes to chips and salsa – I only like the chips that have been curled in half! For some reason, I think those ones are just extra crunchy so Tim always saves the curled chips for me!

I haven’t had a reaction to xantham gum, but hopefully it stays that way! I only use a tiny 1/4 teaspoon at the most, otherwise it can actually make my shakes too thick!
I LOVE Mexican food! I could eat it for every meal, every day. I am a HUGE Mexican steak girl, but have been trying to switch to chicken recently. It is a tough adjustment. Chili Relleno’s are my current favorite.
I love ordering steak and chicken combo fajitas! Usually when I do, that means I have a lot of leftovers, but that is absolutely just fine with me!

I had another smoothie this morning! This time it was made with coffee, almond milk, peanut butter, banana, vanilla protein, and some ice! Delicious and woke me right up!
