WIAW: Buckeye Ice Cream

This past weekend was filled with both good and bad moments. Let’s get the bad out of the way first, shall we?

My poor Ohio State Buckeyes once again lost its BCS bowl game and to be perfectly honest, my heart is a little broken. We just didn’t play well and Clemson deserved to win, it’s as simple as that. Until next year Bucks!

Now that is out of the way, let’s move onto the good! Even though the game did not go as planned, at least I got to spend the game with my family! Tim, Tebow and I spent the night at my parents’ house Friday to watch the big game. While the boys chowed down on chicken wings and ribs, my mom and I made a batch of Turkey Lettuce Wrap Tacos.  I also made the boys a big stack of nachos using tortilla chips, cheese, and the taco filling. For dessert, I whipped up another Dashing Dish recipe, the Snickers Protein Shake to be exact. It tasted great and even my dad liked it, so you know it tasted much more dessert-like than protein-like. It made for the perfect healthy sweet bite at the end of the meal…Delish!

Saturday morning I took advantage of my parents’ treadmill and ran a little over 3 miles while watching the Food Network’s new show, The Kitchen. I thought the show was okay.  It was laid back and I enjoyed the talk-show vibe that it had, but I was looking for it to have just a bit more of a spark! Later in the day, I headed with my brother to the mall so that he could pick up his new laptop he ordered from Apple, and I did a good job of not buying anything while we were there! It was tough, but thankfully I was able to stay strong. Thank you budget for helping to keep me on track! The rest of the day was spent at my house watching football and simply relaxing!

Sunday morning I woke up, wrote my meal-plan post, and made Tim and I a classic breakfast made over in a healthy way. I went back to the basics with a traditional 2x2x2 diner breakfast that was healthy and delicious.  Definitely a winner! 

Organic, Hormone-Free eggs, turkey bacon and Ezekial ToastI had two Eggland’s Best eggs cooked over easy in coconut oil, two slices of Earth Fare turkey bacon, and two slices of Ezekial Toast with organic butter. This breakfast tasted amazing! It is pretty crazy how different that same type of food can taste when the best ingredients are used. Being able to have a hormone-free, healthy, nutrition-packed breakfast that still tastes amazing is such a joy and definitely makes eating right and sticking to our New Year’s Resolution that much easier.

I worked on my Media page throughout the morning and then took a break for a little exercise. I did the elliptical for 45 minutes and then some stretching followed while I watched Parenthood. Thanks Ashley for the recommendation! It starts off a little slow, but the more episodes I watch, the more episodes I want to watch!

After a shower, lunch followed in the form of a Berry Banana Green Smoothie! This recipe was a good one and will be shared tomorrow! It’s an easy, healthy and tasty way to get those greens in as much as possible!

photo 2I also began working on prepping dinner while I sipped my lunch. I made a Loaded Baked Potato Crockpot Soup for dinner that turned out great!

Loaded Baked Potato Crockpot Soup It was made with both potatoes and cauliflower, along with Greek yogurt for an extra hint of creaminess.  I made a couple extra slices of turkey bacon at breakfast to crumble on top, which worked out perfectly!  I also added fresh grated maple smoked cheddar and a little sour cream on top. Delicious and hit the spot on a cold winter day!

Loaded Baked Potato Crockpot Soup After I was all warmed up from the soup though, I cooled back down again with a little ice cream in the evening while watching football. I had a craving, and my husband fulfilled it by going to the grocery and picking us up a tub of organic vanilla ice cream. Love that man!

Organic Vanilla Ice Cream, Peanut Butter and Ghiradelli Dark Chocolate ChipsI topped my scoop with peanut butter, (just do it!!) and a few Ghiradelli dark chocolate chips. It tasted just like a scoop of buckeye ice cream from our local Graeter’s ice cream shop…Amazing!

  1. I love to get pancakes for a diner breakfast! There is one place near me that is FAMOUS for their pancakes. They are SO good and gigantic!

      I love pancakes too! Our local breakfast spot has the most amazing whole wheat pancakes ever! Seriously, they are two times the size of my head and amazing lol! Definitely worth the sugar coma every time! 🙂

      Oh how awesome! Gotta love Ohio colleges! 😉 Buckeyes were always such a special treat in our house. I made a ton for my graduation party after college! We had leftover Buckeyes for months, but thankfully they freeze just perfectly so we were able to finish every one lol!

      Glad we are on the same when it comes to peanut butter! 🙂 Agreed, not strange…just relish! I am a Denver Broncos fan because of the husband and he is a Buckeyes fan because of me! It’s funny how compromise is even used in the topic of sports in a marriage! Ha!

  5. I’ve been wanting to get caught back up with Parenthood!! I remember thinking it was slow too, but now that several seasons have passed the commercials look SO good I am dying to get back into it! That ice cream looks like just what my sweet tooth is craving this morning!

      Thank goodness for Netflix because there are so many shows I love now, but never would have gotten a chance to see! It can be so hard to keep up with shows, so I love how Netflix allows me to work at my own pace. 🙂 Ahh for sure! I could totally go for a bowl of ice cream this morning lol! It is Friday, so I feel like that in itself qualifies for a celebration! 🙂

    And you will fall even more in love with Parenthood. It is one of my favorite shows on TV right now. You just reminded me that I haven’t watched the most recent episode yet and need to do so soon.

      Ha ha thank you! I don’t know about genius, but I literally threw all of my cravings – ice cream, peanut butter, and chocolate – all into one bowl lol! Thankfully it tasted fabulous! 🙂 Everyone keeps telling me that Parenthood just keeps getting better and better so it makes me want to keep watching as fast as I can to get to the really good parts ha!

  7. Yum! I love to top my vanilla ice cream with nut butter and chocolate chip. Way to go, lady! And also what an awesome idea to top mashed potatoes (cauli) with what usually goes on a baked one. I bet the mixture tasted divine and now I am totally intrigued to try it for myself soon!

      This was the first time I’ve ever done it, and let’s just say that it won’t be my last! And yes on the bacon, sour cream, cheese etc. on potato soup! It tastes amazing and makes the soup taste so rich and decadent, even if it is really healthy!

  8. I’m so glad to hear you’re loving Parenthood! I’ve learned that it takes a few episodes to get into most shows, so I always make myself watch 5 episodes before I give up on it.

    LOVE that ice cream combo! I almost always add peanut butter to my ice cream. It’s the best!

      I agree! Some of my very favorite shows took awhile to get into enjoying. It is the same thing in my opinion when it comes to books too. The first couple chapters can be a little rough to get through, but after that the plot heats up and I am hooked! 🙂

      Ahh thanks lady! I have never tried coconut milk ice cream before, but I am sure it would taste just as amazing topped with pb + chocolate! Yum!
