This past weekend was filled with both good and bad moments. Let’s get the bad out of the way first, shall we?
My poor Ohio State Buckeyes once again lost its BCS bowl game and to be perfectly honest, my heart is a little broken. We just didn’t play well and Clemson deserved to win, it’s as simple as that. Until next year Bucks!
Now that is out of the way, let’s move onto the good! Even though the game did not go as planned, at least I got to spend the game with my family! Tim, Tebow and I spent the night at my parents’ house Friday to watch the big game. While the boys chowed down on chicken wings and ribs, my mom and I made a batch of Turkey Lettuce Wrap Tacos. I also made the boys a big stack of nachos using tortilla chips, cheese, and the taco filling. For dessert, I whipped up another Dashing Dish recipe, the Snickers Protein Shake to be exact. It tasted great and even my dad liked it, so you know it tasted much more dessert-like than protein-like. It made for the perfect healthy sweet bite at the end of the meal…Delish!
Saturday morning I took advantage of my parents’ treadmill and ran a little over 3 miles while watching the Food Network’s new show, The Kitchen. I thought the show was okay. It was laid back and I enjoyed the talk-show vibe that it had, but I was looking for it to have just a bit more of a spark! Later in the day, I headed with my brother to the mall so that he could pick up his new laptop he ordered from Apple, and I did a good job of not buying anything while we were there! It was tough, but thankfully I was able to stay strong. Thank you budget for helping to keep me on track! The rest of the day was spent at my house watching football and simply relaxing!
Sunday morning I woke up, wrote my meal-plan post, and made Tim and I a classic breakfast made over in a healthy way. I went back to the basics with a traditional 2x2x2 diner breakfast that was healthy and delicious. Definitely a winner!
I had two Eggland’s Best eggs cooked over easy in coconut oil, two slices of Earth Fare turkey bacon, and two slices of Ezekial Toast with organic butter. This breakfast tasted amazing! It is pretty crazy how different that same type of food can taste when the best ingredients are used. Being able to have a hormone-free, healthy, nutrition-packed breakfast that still tastes amazing is such a joy and definitely makes eating right and sticking to our New Year’s Resolution that much easier.
I worked on my Media page throughout the morning and then took a break for a little exercise. I did the elliptical for 45 minutes and then some stretching followed while I watched Parenthood. Thanks Ashley for the recommendation! It starts off a little slow, but the more episodes I watch, the more episodes I want to watch!
After a shower, lunch followed in the form of a Berry Banana Green Smoothie! This recipe was a good one and will be shared tomorrow! It’s an easy, healthy and tasty way to get those greens in as much as possible!
I also began working on prepping dinner while I sipped my lunch. I made a Loaded Baked Potato Crockpot Soup for dinner that turned out great!
It was made with both potatoes and cauliflower, along with Greek yogurt for an extra hint of creaminess. I made a couple extra slices of turkey bacon at breakfast to crumble on top, which worked out perfectly! I also added fresh grated maple smoked cheddar and a little sour cream on top. Delicious and hit the spot on a cold winter day!
After I was all warmed up from the soup though, I cooled back down again with a little ice cream in the evening while watching football. I had a craving, and my husband fulfilled it by going to the grocery and picking us up a tub of organic vanilla ice cream. Love that man!
