Good morning and happy Sunday everyone! I am going to keep today’s post short and sweet as I am still busy recovering from a couple migraine’s over the last few days. I think all of these freezing temperatures and dry air are finally starting to catch up with me so you can imagine that there has been a whole lot of hot tea and rest happening around here!
Let’s dive right into this week’s meal plan, shall we?
Meal Plan: January 27th-February 2nd
Monday, January 27th: Turkey Santa Fe Lettuce Wraps via Skinnytaste (The only difference is we will be using ground turkey.)
Tuesday, January 28th: Sausage Potato Bake via Two Peas and Their Pod (The only difference is we will be using chicken sausage that we picked up at Whole Foods instead of smoke turkey sausage)
Wednesday, January 29th: No Bean Turkey & Sweet Potato Chili via Skinnytaste
Thursday, January 30th: TBD / Leftovers
Friday, January 31st: Pomegranate, Kale and Wild Rice Salad with Walnuts and Feta via Pinch of Yum
Saturday, February 1st: TBD / Leftovers
Sunday, February 2nd: Super Bowl Sunday! This day is still a little up in the air for us when it comes to our menu. I haven’t yet narrowed down what I would like to make! Here are a few options I am currently considering:
