Meal Plan Link-Up #11: Super Eats

Good morning and happy Sunday everyone!  I am going to keep today’s post short and sweet as I am still busy recovering from a couple migraine’s over the last few days.  I think all of these freezing temperatures and dry air are finally starting to catch up with me so you can imagine that there has been a whole lot of hot tea and rest happening around here!

Meal Plan: January 27th-February 2nd

Monday, January 27th: Turkey Santa Fe Lettuce Wraps via Skinnytaste (The only difference is we will be using ground turkey.)


Tuesday, January 28th: Sausage Potato Bake via Two Peas and Their Pod (The only difference is we will be using chicken sausage that we picked up at Whole Foods instead of smoke turkey sausage)

Friday, January 31st: Pomegranate, Kale and Wild Rice Salad with Walnuts and Feta via Pinch of Yum


Saturday, February 1st: TBD / Leftovers

Sunday, February 2nd: Super Bowl Sunday!  This day is still a little up in the air for us when it comes to our menu.  I haven’t yet narrowed down what I would like to make!  Here are a few options I am currently considering:

    I absolutely love your blog. The photos always make me want to cook – and I’m loving the meal plan for the upcoming week – especially the sausage and potato bake! I had something similar planned for Wednesday so I have most of the ingredients, but I’m going to go to the store and pick up some potatoes! Keep up the great work!

I am so glad that you enjoy reading my blog! 🙂 I have never made the sausage and potato bake before, but it caught my eye as an easy dish that I think my husband will really like too! If I am going to make him a kale salad on Friday, I figured that I better feed him a dish I know he will love earlier in the week! 😉

  3. The pizza and brownies look amazing! I’m actually planning on making the Chipotle Chicken tacos for dinner tomorrow night 🙂 We’re unsure what we’re doing for the Super Bowl yet. If we stay home and hang out I plan on making mini turkey corn dog muffins, chicken or turkey meatballs, or stuffed buffalo chicken breasts along with a nice, big salad.

      Thanks Kim! The pizza recipe is one of my very favorites! I love deep dish, and this is a good one because it incorporates some veggies into it too! 😉 I love the mini corn dog muffins idea! My husband would love that!

  4. Everything on here looks divine! The chili, the gorgeous kale salad. but I need to try the Crockpot Pulled Pork + Beer Cheese Grilled Cheese Sandwiches! (link doesn’t point to right direction).

    I didn’t have a meal plan prepared this week. But after seeing yours I went ahead and planned my family’s week night meals. Thank you for the inspiration!

  6. I’m so sorry you’re dealing with migraines! 🙁 I’ve never had them, but I can’t even imagine how terrible they are. Hopefully they go away ASAP!

    I tried out your Slow Cooker Chipotle Chicken “Tacos” (we ate them with chips too) earlier this week, and it was a hit! Cody and I both loved it. I pinned it, and I noticed LOTS of people were re-pinning it too! 😉

      Ahh yay! I am so glad the chipotle chicken tacos worked out well, and thank you so much for sharing them on Pinterest! I think people like them because we area all in need of easy, budget-friendly, slow cooker recipes! I think I am going to have to come up with some more easy recipes like that to share! 🙂

  11. That turkey chili looks phenomenal! I am not a BEAN fan, so this fits perfectly in my diet! 🙂

    No plans for the super bowl. Honestly, I don’t think I am going to even watch it, at all!! My mom is coming to visit and she’s not a football person, so we are going to ditch it! Hey,maybe we will see a movie, because the theaters will probably be EMPTY! HA! GENIUS!
