Meal Plan #12: Go Broncos!

As you all know, there is a certain football game playing tonight and my household seems to be on edge in anticipation.


Tim has been a Broncos fan as long as I have known him, and it is also one of the things that drew me to him. If he could have that much passion, love and loyalty to a sports team, I began to wonder whether he could have those same intense feelings for me someday as well…  (And he does!  Just without the jersey wearing, television yelling, and game time stressing… I think I got the better end of that deal!!)

In honor of the big game, I thought I would share a few pictures from our trip to Denver in June 2009.  The trip was his college graduation present from me!


I knew how badly he wanted to visit the Mile High City and to see Invesco Field, so if anyone was going to witness his excitement the first time he walked out onto the turf, I wanted it to be me!


You never know how sports and football games are going to turn out, but here’s to hoping it will be good news in my house.

No matter what though I can guarantee this, my husband will always be a Broncos fan and I will always support his team as well!  Happy Husband = Happy Wife!

Monday, February 3rd: The Big Vegan Bowl via Oh She Glows (I figured that after a night of Super Bowl recipe indulgences, a few extra veggies would do our health some good!)

Tuesday, February 4th: 10 Minute Black Bean & Corn Quesadillas via Dashing Dish (These look so good and easy-peasy! I am going to add chicken to our recipe though, because I am not sure how Tim would feel going vegetarian two days in a row… Ha!)

Friday, February 7th: The Perfect Veggie Burger via Oh She Glows (Yes, another recipe by Angela and yet another appearance of my favorite veggie burger!  I have a friend coming over for girl’s night, and I know she will love it too!)

Sunday, February 9th: Crock Pot Chicken & Dumplings  (Recipe to come!  I am really looking forward to whipping up a big batch of chicken and dumplings.  It is one of my very favorite meals from childhood!)

  5. I need to try that veggie burger recipe… the last one I made was just okay. Hope the game goes your way! Neither team is one we usually follow, so that makes for more of a low key game. 🙂

      Ahh yeh, definitely give the Oh She Glows veggie burger recipe a shot! It is amazing and holds together perfectly. Such a good one!

      After last night, I think I almost prefer my team not being in the Super Bowl lol? A lot less pressure that way! 😉
